Cream truffles

Materials:

  • 150 grams of FunCakes mix for Butter cream
  • 150 grams of butter (at room temperature)
  • 200 ml of whipped cream
  • 400 grams of FunCakes Chocolate Melts Dark
  • 100 grams good quality cocoa powder (25 grams on a plate, 75 grams in a cocoa caster)
  • Toothpicks
  • Chocolate melter
  • Baking paper
  • Piping bag with decorating tip 12 (optional)
  • Small serving tray

Preparation:

 


Put together the whipped cream and the butter cream mix and let this rest for half an hour.
Beat the butter until it is light and fluffy, then add the whipped cream mixture and mix at medium speed until you have a homogeneous mass.

 

Use two tablespoons to create nice quenelles on a serving tray covered with baking paper (or pipe swirls with decorating tip 12). Put a toothpick in each quenelle or swirl and put the serving tray inside the freezer for at least 30 minutes.

Melt the chocolate, preferably in a chocolate melter because this will keep the chocolate liquid. The cold quenelles will cool off the chocolate very rapidly.

 

Pick up the quenelle at the toothpick and dip it entirely in the chocolate. Now keep the truffle horizontally and tap off the excess chocolate. Put the truffle on the plate with cocoa powder and use the cocoa caster to cover the truffle completely. Gently tap off the excess cocoa powder on the side of the plate. Be careful, because the chocolate might not have fully hardened. Put the truffle on a tray to let the chocolate get solid.

 

Repeat this until all truffles are covered in chocolate and cocoa powder. Now remove the toothpicks and serve them on a nice platter.


The truffles need to be kept cool and has a shelf life of approximately 3 days in the refrigerator. They are also suitable for freezing and can then be kept for 3 months. Thaw in the refrigerator.

 

If you wish you can add extra flavour, for example by adding a little rum to the butter cream or by making champagne truffles. Also, the FunCakes flavourings offer many possibilities to vary with flavour.
