Cupcakes with Advocaat cream

Cupcakes with Advocaat creamMaterials:

  • 500 gram FunCakes mix for Cupcakes
  • 5 eggs (approx. 250 gram)
  • 250 gram soft unsalted butter
  • muffin/cupcake baking pan (standard, 2 stuks)
  • 24 baking cups
  • 100 gram Advocaat (on room temperature)
  • 100 gram FunCakes mix for Crème pâtissière
  • 200 ml water
  • decorating bag

Preparation:
Preheat the oven to 180°C (convection oven 160°C). Place the 24 paper baking cases in the muffin baking pan. Mix the eggs, butter, the mix and salt in a bowl on the lowest setting or by hand for no more than 4 minutes until you have a smooth batter. Fill the baking cups with the batter.

Beat the pastry cream mix and water together with a whisk. Add the Advocaat to the cream and beat well. Scoop this into a decorating bag. First pipe a layer of batter into the moulds and then spout onto this layer a ring around the edge. In the hole, pipe a lovely dollop of Advocaat cream. You can also put the batter (using an ice scoop or 2 tablespoons) into the baking moulds and then put the bottom of the piping bag with the Advocaat cream into the middle. This is how you get the filling in the middle of the batter. Put the baking pan into the oven and bake the cakes in 20-25 minutes.

After baking, you can serve the cakes as they are or decorate them as you like. Mix the mixture for buttercream with the water. Let this stiffen for 1 hour. Beat the butter creamy and add it in parts to the cream Add the Advocaat en beat it till a smooth cream.

Place a starshaped tip in  a decorating bag and fill this with the cream. Spray a lovely swirl on the cupcakes and decorate the swirl with a bit of Advocaat.
